The first thing you do to make this Subway Vegan Meatball Sandwich is prepare the onions so you can make pickled red onions, which gives this vegan subway meatball sandwich a healthy twist. Cut the red onion, rinse them in hot water, and then marinate them in red wine vinegar and salt for about 30 minutes.
While the onions are marinating, it’s time to prepare the meatballs in the marinara sauce for this subway vegan meatball sandwich. For this Subway Vegan Meatball Sandwich Recipe, use Gardein meatballs. Mix the meatballs and marinara together in pot and bring them to a boil to cook.
While the meatballs are cooking, it’s time to toast the bread and melt the cheese. For this recipe, we are using Miyoko’s vegan mozzarella. If you haven’t had the opportunity to try this mozzarella, especially on pizza, make sure you do. It tastes and melts like traditional mozzarella cheese. Slice the mozzarella and lay it down on the bread. Next, toss it in an oven or toaster oven until the cheese has melted.
Once the bread is done, it’s time to make this Subway Vegan Meatball Sandwich. Begin making the sandwich by with a layer of greens. Jenny uses arugula, but you can use whatever you like.
