It’s salsa time!! I just can’t help but busting out some salsa dance moves when I make this. Well, actually, it’s more like a cha cha cha, but nobody is watching, so we’ll call it a salsa. Anyways, this is so quick and easy, you will never be running to store for some of that packaged salsa that’s been sitting on the shelf and traveled who knows how long to get there.
There is not much to this, simply dice the tomatoes and onions, chop the fresh cilantro and throw in the lime juice and….that’s it. I can’t even make this sound more difficult, but the result is an awesome salsa dish full and flavor and it so fresh, you’ll be wondering how many ways you can incorporate this into more meals. One of my favorite ways is by making my Load Mexican Baked Sweet Potato.
- 1 heaping cup of chopped tomatoes (about 2-3 medium tomatoes)
- ¼ cup of chopped onions
- 1 TBSP of chopped cilantro
- 1 TBSP of lime juice
- Salt and pepper to taste
- Mix all the ingredients in a bowl and place in the refrigerator for about 30-60 minutes and serve chilled.
