My friend Yvonne has a vegan and gluten free Meatless Meatball Recipe that is made out of quinoa. Being Italian and growing up on Italian meatballs, I knew I was going to put this vegan and gluten free meatless meatball recipe to the test. The best thing is that she put a healthy twist on this meatless meatball recipe. The first step when making this recipe is water sautéing the vegetables instead of using oil. I have never done this before and I have to say, I was curious how these meatless meatballs were going to taste. After you finish sautéing the vegetables, add the greens and cook until the spinach becomes wilted.
Once the spinach is all ready to go, you can go ahead and add the quinoa and oat flour. Now you mix everything together and you’re ready almost done with this vegan and gluten free meatless meatball recipe. Make the meatless meatballs and place them on a baking sheet. Then place the meatless meatballs in the oven for about 35 mins. For this recipe, we had some left over meatless meatball mixture. We decided to take this extra mixture and make a meatless Italian sausage. We rolled the mixture into a sausage and decided to fry the sausage instead of baking.
While the meatless meatballs are cooking, we made some gluten free pasta and pasta sauce so we were ready to go. When the vegan and gluten free meatless meatball recipe was done, all we had to do was places the meatless meatballs on the plate of pasta and top it with some sauce.
After the first bite, I was blown away by how delicious these vegan and gluten free meatballs were. They definitely reminded me of being a kid and eating my moms homemade meatballs. On top of them being amazing, we used no oil for this vegan and gluten free meatless meatball recipe.
