When I think if fruit, I think of Natalie from Feasting on Fruit. I have made a lot of her recipes in the past and everything has been amazing. She has a lemon bar recipe that is made out of cauliflower! Yes, you heard that correctly, cauliflower! If there was ever a recipe for healthy lemon bars, this is it! I’ve had cauliflower wings and cauliflower mashed potatoes, but a cauliflower dessert? I’m a little skeptical, but I know if anyone can pull this off, I know it’s Natalie.
This lemon bar recipe is vegan, gluten free and so easy to make. It has two parts, the crust and the filling. The crust is only two ingredients. To make the filling, you simply place everything in a blender, pour it on top of the crust and bake it in the oven. The most difficult part of the lemon bar recipe is after you remove the bars from the oven. You then need to place them in the refrigerator overnight util you can eat them, but they are worth the wait.
After waiting until the next day, these lemon bars are ready to try. These are so delicious, so creamy and taste just like a lemon bar you would buy at a restaurant. You can’t even taste the cauliflower! Natalie, you did it again with this healthy lemon bar recipe! This is definitely a winner.
