It’s time for some healthy and easy to make baked plantains.
Remember being a kid in the grocery store and there were those things next to the bananas that looked like bananas, but they looked a little different. Sometimes the were green and sometimes they were yellow. Allow me introduce you to plantains! Plantains are high in fiber, Vitamin A and Vitamin C. When the plantain are green, they can be cut up and fried to make plantain chips or baked in the oven.
Furthermore, if you have the patience to wait for them to ripen and turn yellow, you will be left with an amazing piece of fruit that can be baked to make a simple and easy dessert that requires only 3 ingredients. This is exactly what we are going to do today! If there are multiple mouths, I suggest having more plantains on hand and ready to go. Since these will definitely disappear quickly!
LET’S MAKE SOME BAKED PLANTAINS
First thing you need to do is take a knife and chop off each end of the plantains. Next, take the knife and create a slit that goes about half way into the plantain. You can now easily remove the peel.
Next, place them on a pan and bake them in the oven at 400 degrees F for about 45 mins. You know they are done when they are golden and the slit has opened up.
Finally, once you remove them, simple drizzle some coconut oil and cinnamon on top….and you’re done. Can this be any easier? I love to eat these right away while they are still warm and the coconut oil has melted and created a soft and creamy texture that compliments the cinnamon beautifully. As a result, they never have a chance to cool down when I make them. Most of all, I hope you enjoy them as much as me. Enjoy!
